So this Vegan Kimchi & Tempeh Vegan Noodle Soup was awesome to make! I have been obsessed with kimchi and tempeh once I found out their awesome health benefits a few years back.
I deal with chronic pain that developed after mercury poisoning I got from a Tetanus vaccination and I already had digestive and thyroid issues prior to this vaccination as well. So I had to shift how I ate and I had to start incorporating fermented foods into my diet. I originally got this recipe off of Full of Plants and I made it for my friends and myself! I can say they thoroughly enjoyed it!
- 1 tbsp. of avocado oil (at least that is what I used)
- 1/2 onion, finely diced
- 2 cloves of garlic, minced
- 1/5th of ginger, grated
- 1/2 cup of kimchi, roughly chopped
- 3 cups of water
- 2 tbsp. of soy-free sauce (the brand I use is Coconut Secret but you can honestly find soy-free sauce anywhere now)
- 3 tbsp. date sugar (he used coconut sugar rather)
- 1 tsp. of Korean chili flakes
- 3/4 tsp. Pink Himalayan salt
- 1 cup of mixed mushrooms (I didn’t dice mine but he did – I prefer the texture of whole mushrooms)
- 1 bok choy cut in half (or your favorite greens)
- 1/2 of a tempeh package, sliced into rectangular pieces (for two people — use full package if cooking for more)
- 3.5 ounces dry noodles (I used rice noodles but I totally wanted to get gluten-free noodles)
- 1/4 cup of cilantro green onions for topping
Here are some awesome benefits of kimchi and tempeh. One of my favorite things about kimchi is that it contains probiotics. Kimchi is a fermented foods so therefore it is extremely good for your gut health. The lacto-fermentation process that kimchi undergoes uses the bacterium Lactobacillus to break sugars down into lactic acid. This is why kimchi has such a strident and sour taste. I love the taste but some people aren’t used to it so I aalways suggest making it around your favorite dishes and just adding it in.
Kimchi is also nutrient dense, helps with your immune system and keeping you healthy due to the Lactobacillus bacterium, may reduce inflammation, may slow aging, may prevent yeast infections and so much more!

Tempeh is another fermented food and it derives from Indonesia. It is a plant-based protein which is dense with nutrients, promotes heart health and manages weight as well. Again, one of my favorite benefits is the fact that tempeh is also good for your gut health. It has a lot of prebiotics in it which is a type of fiber that provides fuel for the good bacteria in your gut. I will be doing special features on both kimchi and tempeh soon!
